Beef tartare/ sourdough crisp/ (secret) egg yolk emulsion/ parmesan.
Confit salmon/ fig/ radish/ caviar.
Salt roasted squash/ chard/ semi dried yoghurt/ togarashi.
Yuzu cured pork jowl/ artichoke/ pea.
Lemon babina brulee/ crystallised ginger.
all with 100ml matching wines selected by Sean and Cecilia.
